Garlic Chickpeas with Spring Mix Salad So I planned on making this salad for a roadtrip I took with my family. My uncle got married in Michigan, and we had about a 7 hour car ride to get there. Of course, everyone wanted to eat potato chips and candy. Which are fantastic, but I’d rather have a healthier snack that won’t make me feel nasty right before a wedding. For the trip my mom and I made sandwiches, brought fruit, pasta salad and some salad mix. We had enough food for the trip so I ended up not having to make this dish. I really wanted to try it, because I love chickpeas. So I made it for dinner when I got back to school. It was wonderful and very filling.

Garlic Chickpeas in Olive Oil

Ingredients:

3 tbsp olive oil

2 garlic cloves, finely sliced

1 can chickpeas, drained and rinsed

juice of 1/2 lemon

handful fresh parsley, chopped

salt and pepper

spring garden mix

Heat the oil in a frying pan, add the garlic and parsley. Then add the chickpeas and cook for 2 minutes. Stir in the lemon juice and cook for another 2 minutes.

Remove from the heat and season with salt and pepper. Serve hot or cold over a bed of fresh spring garden mix.

Drained and rinsed chickpeas. These are delicious alone! I had to stop myself from eating all of them.

Sliced garlic. The middle was a little green and sprouty, but I didn’t have anymore garlic so I just used it.

Cook the garlic and parsley.

Throw in the chickpeas and lemon juice. Cook for a couple minutes.

Serve over spring garden mix.

A yogurt concoction for people who don't like yogurt.

We all know that person (or two… or five) who doesn’t like yogurt. They think it’s gross, they hate the consistency, etc. Well, I have come up with the perfect, delectable solution to their problem. 

To be frank, yogurt is this bomb diggity. It is ridiculously good for you, moderately cheap on a college budget, and a great tasting substitute for your glasses of milk a day. But it’s not for everyone. Here is a way to convert some of the non-believers to see the awesomeness that is yogurt.

What you need:

  • One cup yogurt (I use Vanilla or FAGE plain Greek yogurt, but it is up to you)
  • 1/4 cup granola (measurements subject to change based on “crunchy” preference)
  • 2 tablespoons of honey
  • 1 teaspoon cinnamon
  • 1 teaspoon Craisins (Completely optional; not my thing but I’m told it’s delicious)
  1.  Put your yogurt into a good-sized bowl (I know, great measuring, Sam. But eyeball it.)
  2. Add your granola slowly, constantly stirring the yogurt for optimal spread rate.
  3. Add the honey in a drizzle pattern so it doesn’t clump in any part of the yogurt. For best results, heat the honey a little beforehand.

  4. Add the cinnamon slowly, but do not add it all at once; it is a strong spice, and I would recommend taste testing it periodically to see if it is too strong for your palate.

Et Viola! The result is a tasty, crunchy, sweet bowl of deliciousness that even the haters may love and won’t kill your wallet. Cheers!
