a pork roast

brown the roast then put it in the crockpot
submerge the roast in green salsa and let it cook on low over night
serve on corn tortillas with fresh cilantro and lime juice
the pork becomes so tender and delicious and it is enough food for days. easy to freeze in individual servings

Mediterranean Mashed
2 lbs Russet Potatoes
Large Pot
1/4 cup olive oil
2 tbsp basil (fresh)
2 tbsp tarragon
2 tbsp parsley (fresh)
Cover 2 pounds whole russet potatoes with cold salted water.
Simmer 45 minutes; drain and peel.
Mash with 1/2 cup cooking liquid.
Finish with olive oil and chopped basil, tarragon and parsley.
This recipe is so fuckin’ delicious, and makes good sized servings....
