Apple Harvest Bread
adapted from several on allrecipes, with my own touches
- 2 medium apples
- 1/2 medium carrot
- 1/2 C broken walnuts
- 1 1/2 C flour
- 1 C sugar
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1 egg
- cinnamon, clove, nutmeg, allspice to taste
- pinch salt
Preheat oven to 350. In one bowl, mix flour, baking soda, baking powder, spices (I like a lot!), and salt. Peel and chop one apple roughly and add that as well with the walnuts. In a smaller bowl, grate the second apple (I left the skin on) and the carrot (ditto) and beat in the egg and sugar. Add the liquids to the dries and mix to fully combine—the batter will be very thick. Splash a little cider or just water in if it seems egregious, but it should be dense so that the apples and nuts stay suspended when it bakes. Grease a loaf pan and bake for 40-45 minutes. Easily veganized by omitting the egg and grating in another apple.
