The Collegiate Culinarian: Grilled Chicken with Zucchini Rolls and Roasted Vegetables
So, I’m sorry its been a while. I have been working non-stop and school started. I still haven’t really had time to get my act together. So with my free time tonight, I decided to blog. It makes me happy and I missed doing it. I am behind in blogs so this will be the first of a few.

Grilled Chicken Drumstick with Zucchini Rolls and Roasted Vegetables Ingredients: for the chicken 10 chicken drumsticks barbecue sauce (for half of the drumsticks) cilantro salt pepper olive oil lemon juice Marinated the drumsticks for about an hour before grilling. Grill, covered for about 4 minutes, turn and cook for another 3 minutes. Uncover and cook for 2 minutes, turn and cook another 2. They should be done, I didn’t exactly time them. For the zucchini rolls 1/2 a medium zucchini, thinly sliced (you can use a potato peeler or mandolin) 2 oz goat cheese 1 small red chili, chopped 1 yellow sweet banana pepper, sliced 2 handfuls fresh spinach olive oil salt and pepper Grill the oiled and seasoned zucchini slices for about 1 minute each side. Mix together the chili and goat cheese. Spread the goat cheese across the zucchini slice. Add the banana pepper and spinach to one end of the slice. Proceed to roll up, spinach side first. Stick a toothpick through the roll. Serve for the roasted vegetables 1 broccoli crown, chopped 1 red banana pepper, chopped 1 green onion, chopped 5 garlic cloves, chopped into big pieces olive oil salt and pepper Toss all the vegetables with a little olive oil, salt and pepper. Wrapped them in foil and throw on the grill for about 20 minutes. Unwrap and serve hot. Drumsticks, cilantro, and lemon. Drumsticks marinading. Vegetables for roasting. Toss with olive oil and wrap up in foil. Zucchini roll ingredients. Grill the slices. Grilled zucchini strips. Spread some of the chili goat cheese across the strip. Place the spinach and pepper at one end. Roll it up! Finished zucchini rolls. Yum! Grilled chicken. Some burnt…whatever.
